Batch Cooking: Sise Spice Chicken

When we grill chicken, we grill a bunch. (When the grill is hot... grill a lot!). We use it all week or even throw it in the freezer to pull out a week or two later! Having protein ready makes it easy to pull any meal (or snack) together quickly.

I'm sharing one of our favorite ways to grill once and make it count, our Sise Spice Grilled Chicken!

SISE SPICE GRILLED CHICKEN (3 WAYS)

“Sise Spice” is a seasoning trio that Greg made once on a whim, and we've been using it ever since. It's so simple and so versatile and the perfect seasoning for batch cooking chicken. Season a whole bunch of chicken with it and check out the 3 ways we change it up! This recipe is from my cookbook, Let's Eat MORE, that you can purchase as a digital download or as a printed book.

Ingredients

  • 4–6 boneless skinless chicken breasts, or boneless skinless tenderloins

  • Olive oil spray

  • 1 teaspoon garlic powder

  • 1 teaspoon kosher salt

  • 10 - 15 twists tricolor pepper from a tricolor peppercorn grinder

Instructions

  1. Combine garlic powder, kosher salt and tricolor pepper.

  2. Spray each chicken breast with olive oil spray.

  3. Sprinkle spice mixture evenly on each chicken breast on both sides, pressing spices in gently.

  4. Grill each chicken breast on a hot grill.

  5. If adding a sauce (see our favorites below!) begin to baste halfway through cooking.

Change it up with the sauces we LOVE

BBQ

Add your favorite BBQ sauce to a small glass bowl. (We like Head Country. Sugar-free works well too.)

BUFFALO

Pour ½ cup Frank’s Buffalo Sauce in a small glass bowl. Add 3 tablespoons honey and 1 tablespoon of freshly squeezed lime juice to buffalo sauce. Whisk to combine thoroughly.

TERIYAKI

Add your favorite bottle of teriyaki sauce to a small glass bowl. Stir in 1 teaspoon of sesame oil and 1 teaspoon of Sambal Oelek or Sriracha, if you like heat. Whisk to combine thoroughly.

Also... if you don’t like to grill you can cook all of this goodness in a cast-iron skillet.
