No Bake Energy Bites

This recipe has fed 100s of kids… literally… it has been a long-time staple in our house and has since become a staple in my son’s fraternity house. I have shared this recipe more times than I can count.

Prep Time: 5 minutes

Note: I always double this recipe!

Ingredients

  • 1 cup oats

  • 1/3 cup honey

  • 1/2 cup ground flaxseed

  • 1/2 cup natural peanut butter (I use Santa Cruz peanut butter)

  • 1/2 cup mini chocolate chips or dark chocolate chips (Enjoy Life chips make this dairy-free)

Instructions

  1. Mix all ingredients thoroughly.

  2. Roll into balls.

  3. Place in an airtight container and store in the refrigerator. (You can also just put the whole batch in the fridge and spoon some out whenever you’d like.)

ENERGY BITE TWEAKS …

  • Roll them in shredded coconut

  • Swap peanut butter for almond butter

  • Add chopped almonds

  • Add chia seeds

  • Use less honey

This recipe is also really yummy as a topping for thinly sliced apples.
